Werder is not a priority at the small Drappier family winery. The Drappiers want to impress above all through quality and not through expensive advertising. Michel Drappier, who now runs the winery, which was founded by his great-grandfather in 1808, is particularly focussed on the good compatibility of the Champagne. For Michel, it is particularly important to greatly reduce the use of sulphur.

Champagne Drappier Carte d'Or Brut brings out all the flavours of the noble Pinot Noir grape variety, which makes up 80% of the cuvée. This red grape with white juice is appreciated because it gives the wine structure and especially because it contributes very characteristic fine notes of red berries.

Only cuvées from the first pressing are used.

Mechanical pressing at low pressure, vinification by gravity and a two-week fermentation at low temperature are just the first steps in the production process.

Natural clarification and complete malolactic fermentation follow; after bottling, the wine matures in the bottle for another 2 to 3 years.
