The apples are harvested at the ideal stage of ripeness and taken to the production facility where they are washed and crushed. This pulp is pressed and the pure fruit juice is extracted, which is then concentrated and stored, with the fructose from the apples acting as a preservative. The concentrated apple juice then undergoes a fermentation and maturation process to allow the subtle flavours to develop.
