The grapes come from wine-growing areas in north-east Italy with marly soils of alluvial origin, which are rich in minerals in the subsoil. After gentle pressing of the white grapes, the must is stored at a controlled temperature, while the red grapes are gently macerated to extract colour and fine tannins. The second fermentation then takes place at a controlled 15-16 °C with selected yeast cultures, resulting in a fine and long-lasting perlage. After at least two months on the lees, Villa Sandi Il Fresco Rosé Brut Rosato is particularly harmonious and elegant.
