The Villa Sandi winery, located in the heart of the Prosecco region of Veneto, Italy, is a renowned winery known for its high-quality sparkling and still wines. Villa Sandi, a magnificent 17th century building, serves as the winery's impressive headquarters and reflects the rich history and tradition of winemaking in this region.

Villa Sandi is particularly famous for its Prosecco production. The grapes grow on the hilly landscapes of Valdobbiadene, where the microclimate and mineral-rich soils provide ideal conditions for cultivation. The grapes are carefully harvested by hand to ensure the best possible quality. Sustainability and environmental protection take centre stage, which is underlined by modern techniques and numerous certifications.

Villa Sandi Il Fresco Prosecco Biologico Organic is made from 100% Glera grapes, which are harvested over a ten-day period in September under the best conditions. The grapes are gently pressed in a pneumatic press and the resulting must is transferred to temperature-controlled tanks after a first racking, where it remains until further processing.

The must is then mixed with specially selected yeast cultures from Villa Sandi and filled into containers. Fermentation takes place at a controlled temperature of 15-16°C in order to optimally enhance the flavours of the grape harvest. Once the desired alcohol and sugar content has been reached, fermentation is stopped by cooling and, after a short settling period, the sparkling wine is ready for bottling. The secondary fermentation is carried out in such a way that the entire aromatic heritage is preserved and the typical floral and fruity aromas of the variety and the region can fully develop.
