The Villa Sandi winery, located in the heart of the Prosecco region of Veneto, Italy, is a renowned winery known for its high-quality sparkling and still wines. Villa Sandi, a magnificent 17th century building, serves as the winery's impressive headquarters and reflects the rich history and tradition of winemaking in this region.
Villa Sandi is particularly famous for its Prosecco production. The grapes grow on the hilly landscapes of Valdobbiadene, where the microclimate and mineral-rich soils provide ideal conditions for cultivation. The grapes are carefully harvested by hand to ensure the best possible quality. Sustainability and environmental protection take centre stage, which is underlined by modern techniques and numerous certifications.
Villa Sandi Dolce Sandi Vino Spumante is an elegant blend of 60% Pinot Nero and 40% Chardonnay. The grapes come from hilly vineyards with calcareous, medium-textured soils that offer optimal conditions for viticulture, and the grapes are pressed completely and gently in a pneumatic press. After an initial racking, the resulting must is transferred to temperature-controlled fermentation tanks, where it remains until further processing.
The must is mixed with specially selected yeast cultures from Villa Sandi and filled into containers. Fermentation takes place at a controlled temperature of 15-16°C to enhance the flavours of the harvest. As soon as the required alcohol and sugar content is reached, fermentation is stopped by cooling. After a short settling period, the sparkling wine is ready for bottling, which is sealed with a natural cork.
