Yeni Raki is one of the best-known brands of raki in Turkey and shares certain flavour characteristics with other aniseed spirits such as Greek ouzo and French pastis. This traditional aniseed schnapps is made from dried, fermented grapes, which are then distilled and flavoured with aniseed seeds. The distillation process of Yeni Raki is carried out in two steps, with the first step using a selection of Anatolian grape varieties to achieve the characteristic aroma and flavour.

The term "Uzun Demleme", which means "long distilled" in English, refers to the careful distillation process of Yeni Raki, which takes place five times over a total of 72 hours. This careful approach gives Yeni Raki its characteristically mild and smooth flavour.
