At 51.6% ABV in a 0.7-litre bottle and presented in a high-quality gift box (GB), this single malt Scotch whisky embodies the uncompromising cask philosophy of Billy Walker, who is renowned worldwide for his exceptional cask selection and precise cask management. Distilled on 7 July 1989 and bottled in July 2021, this whisky was matured for 32 years exclusively in a Pedro Ximénez puncheon. The long maturation period in this large PX sherry cask lends it exceptional depth without overshadowing the distillery’s characteristic style. Only 584 bottles of this limited single-cask release were produced worldwide, making it of particular interest to both collectors and discerning connoisseurs.


Decades of maturation have resulted in impressive complexity and balance. Rich Pedro Ximénez sherry notes blend with dark fruits, fine spices and an elegant nuttiness. Despite the intense influence of the sherry cask, the whisky remains superbly balanced and never feels overbearing. On the palate, a compote of apricots, dates, dried figs and plums unfolds, accompanied by chocolate cake, vanilla ice cream, caramel sweets and roasted hazelnuts and walnuts. As it matures, subtle tannins and an elegant mineral structure emerge, culminating in a long, dry and harmonious finish with dark sherry notes and a hint of menthol.
