Champagne Taittinger is a world-renowned champagne house that has been family-owned since 1734. This champagne house owns 260 hectares of vineyards. The house is located in Saint-Nicaise in Rems, where the champagnes mature 18 metres underground in the chalk cellar. This dates back to Roman times.
The grapes for this champagne are harvested from the 'Les Folies' vineyard. This vineyard is located above the Château de la Marquetterie. This is known as the residence of the writer Jacques Cazotte, as well as a place for meetings and country festivals during the Age of Enlightenment. The Benedictine monk Brother Oudart discovered interesting secrets about champagne fermentation there. Today, the Château de la Marquetterie is the ancestral home of the Taittinger family. The grapes are harvested by hand. They are then immediately taken to the winery, where they are sorted and crushed. After fermentation of the base wines, further ageing takes place in the bottle. The champagne matures for several months in the bottle and is then disgorged.
