Plantation Rums have long since ceased to be an insider tip. The excellent rums are mainly collected in the Caribbean and also in South America and then brought to France, where they are given their finishing touches. In Ars in France, the rum is then stored for several months in small discarded oak cognac barrels. This type of ageing is known as "double ageing", a technique that was already used in the 18th and 19th centuries.
This rum is traditionally distilled in a column still. It is aged for 7 years in bourbon barrels before the rum is finished for 12 months in old Cognac Ferrand barrels at Château de Bonbonnet.
