Cork, located on the southern coast of Ireland, is home to the picturesque town of Skibbereen, which is crossed by the River Ilen. This region is known for its scenic beauty and cultural significance, particularly in the tradition of whiskey production. In 2007, three friends founded the West Cork Distillery in Skibbereen. This small, independent distillery is characterised by the production of high-quality whiskeys that are made with great care and craftsmanship.

From the very beginning, the founders focussed on quality and tradition, combined with an innovative approach. The West Cork Distillery uses crystal clear spring water and carefully selected grain. This commitment reflects the spirit of innovation and craftsmanship that characterises the Irish whiskey industry.

This whiskey is matured over a period of 4 years in Oloroso Sherry Casks from the renowned Bodega Tolerina Rodriguez in Cadiz. This special ageing gives it its characteristic flavour and deep, complex aroma. After this maturation phase, the whiskey is finished in first fill bourbon casks, which gives it additional notes of vanilla and oak.
