The grapes come from the estate's own vineyards on limestone and clay soils, whose structure and minerality create the basis for depth and balance. After selective hand-picking, the wine is fermented at a controlled temperature in stainless steel tanks and then aged for 20 months in American oak before maturing for a further 24 months in the bottle.
