The basis of this mezcal is the rare agave Cenizo (Durangensis), which thrives in the high altitudes of Durango. This wild agave species takes up to 12 years to reach full maturity. After harvesting, the hearts (piñas) are cooked in earth ovens over wood fires, then crushed in traditional stone mills (tahona) and fermented in open wooden barrels. Double distillation takes place in copper stills, resulting in a particularly pure distillate full of character. With an alcohol content of 40% by volume, Burrito Fiestero Mezcal is pleasantly accessible without losing any of its depth and expressiveness.
