It is based on high-quality molasses, which is fermented for three to five days. Distillation takes place in a twin column still as well as in the traditional Old Gregg's pot still, resulting in a complex and structured distillate. This XO rum with a Pedro Ximénez finish is matured as a blend of very old rums in different types of cask, including new white oak, ex-bourbon casks, Cognac Ferrand casks and casks with varying degrees of toasting. For the PXXO edition, the rum is refined a third time in fine ex-Pedro Ximénez sherry casks from Andalusia. This additional maturation gives the Planteray PXXO 20th Anniversary its characteristic nutty depth and elegant, raisin-like sweetness.
