Ozeki Junmai Daiginjo Sakura Beauty 45 is a fine premium sake in a class of its own that elegantly combines craftsmanship, innovation and traditional Japanese brewing culture. This Junmai Daiginjo is produced by the traditional Ozeki house, which has stood for the highest quality in sake production since 1711. The basis of this sake is Yamadanishiki rice, which is considered the highest quality rice variety for premium sake. For this bottling, it was polished to 45% of its original rice grain size in order to achieve a particularly pure, elegant flavour. The speciality of this Daiginjo lies in the yeast used: Imazu Benikanzakura, a new cherry blossom yeast that was discovered in Nishinomiya, Japan, in 2019. It gives the sake a delicate, floral profile that is complemented by a subtle honey sweetness and soft fruit flavours. Despite its mild flavour, this sake finishes pleasantly dry and structured - a harmonious interplay of fruit, elegance and clarity.
