Description
The Tournon Shay's Flat Vineyard Pyrenees Shiraz 2016 is an Australian quality red wine full of character that combines origin, craftsmanship and elegance in a special way. Produced by the Tournon project in the Australian Pyrenees, this Shiraz comes from the eponymous Shay's Flat Vineyard, which is located on an east-facing ridge in the southern foothills of the Western Pyrenees Ranges. The location acts like a natural amphitheatre and is around 350 metres above sea level, which favours freshness, structure and aromatic precision.
The organically farmed vineyards comprise around ten hectares of Shiraz, spread over two plots. The soils consist of deep red layers of earth, characterised by slate, quartz and clayey components, which give the wine tension, minerality and depth. The grapes are harvested at night to optimise ripeness and avoid over-ripening. After destemming, fermentation takes place in concrete and stainless steel tanks, followed by a long maceration period of three to five weeks, which extracts fine, elegant tannins. Maturation takes place for twelve months in French oak barrels, supplemented by a small amount in concrete, in order to maintain freshness and fruit clarity. With 14.5% alcohol by volume, this Shiraz is remarkably balanced, precise and emphasises the terroir.
