Drappier Champagne Rosé de Saignée Brut 12% vol. in a 0.75-litre bottle is an expressive rosé champagne that impressively reflects the signature style of the long-established Champagne Drappier house. The family-run winery, whose roots date back to 1808, is based in Urville in the heart of the Côte des Bar and enjoys an excellent reputation for authentic, terroir-driven champagnes with a high proportion of Pinot Noir. This Rosé de Saignée is made exclusively from 100% Pinot Noir and produced using the traditional saignée method, in which the colour and aromas are extracted through a two-day maceration period.
The grapes come from the distinctive Kimmeridgian limestone soils of Jurassic origin in Urville and are cultivated in accordance with the principles of sustainable and natural viticulture. Following cold maceration of the destemmed grapes, gentle pressing takes place using a low-pressure plate press. Vinification is carried out exclusively by gravity, followed by natural pre-clarification, malolactic fermentation and unfiltered, unfined bottling. Around 5 per cent of the base wines are aged in large wooden barrels, which adds depth without masking the freshness. The minimal use of sulphur emphasises the natural character of this elegant rosé Champagne, which delights with its structure, purity and finesse.
