Pastis 51 is made from a carefully selected blend of aniseed and other herbs, which give it its characteristic, intense flavour. With an alcohol content of 45% by volume, it has a strong but harmonious flavour and unfolds particularly well when diluted with cold water.
Louche effect?
A slight cloudiness when water is added, the so-called louche effect, is caused by the essential oil athenol.
The additional water releases the oils previously encased in the alcohol and clouds it.
