The Villa Sandi winery, located in the heart of the Prosecco region of Veneto, Italy, is a renowned winery known for its high-quality sparkling and still wines. Villa Sandi, a magnificent 17th century building, serves as the winery's impressive headquarters and reflects the rich history and tradition of winemaking in this region.

Villa Sandi is particularly famous for its Prosecco production. The grapes grow on the hilly landscapes of Valdobbiadene, where the microclimate and mineral-rich soils provide ideal conditions for cultivation. The grapes are carefully harvested by hand to ensure the best possible quality. Sustainability and environmental protection take centre stage, which is underlined by modern techniques and numerous certifications.

The "Asolo Prosecco" D.O.C.G. area is located in Veneto, north of Venice, in the province of Treviso on the Montello and Colli Asolani hills at the foot of the Dolomites. The area has mild spring and autumn temperatures as well as warm summers, which optimally support the growth of the grapes. The grapes come exclusively from certified wineries that work according to the "biodiversity friend" standard.

The Glera grapes are gently pressed in a pneumatic press. After an initial racking, the must is transferred to temperature-controlled tanks where it remains until further processing.

The must is mixed with specially selected yeast cultures from Villa Sandi and transferred to tanks where fermentation takes place at a controlled temperature of 15-16°C to bring out the aromas of the grapes. Once the desired alcohol and sugar content is reached, fermentation is stopped by cooling. After a short resting period, the sparkling wine is ready for bottling.
