Aviation Gin, produced in Portland, Oregon, under the guidance of Master Distillers Christian Krogstad and Andrew Tice, is renowned for its lighter and smoother flavour compared to other dry gins. The production process begins with a blend of selected botanicals such as cardamom, coriander, lavender, aniseed, sarsaparilla, juniper and orange peel, which are macerated for 18 hours. The macerated mixture is then distilled, with the first and last parts of the distillate removed to retain only the high-quality middle section – the ‘heart cut’ – which is then diluted to 84 per cent alcohol by volume, bottled and prepared for dispatch.
