What makes this speciality so unique is its labour-intensive, manual production process: first, roasted and crushed chestnuts from Piedmont are steeped in Dellavalle’s finest grappa for around six months. Following this maceration process, the liquid is separated and matured for around five years in 225-litre chestnut wood casks, handcrafted specifically for the distillery. This rare ageing process imparts deep woody notes, a gentle spiciness and an exceptionally velvety texture to the grappa.
