Production begins with the careful selection of 100% blue agave, which thrives in the mineral-rich volcanic soils of Jalisco. After traditional harvesting, the agave hearts are slowly cooked and then processed in a double pot still distillation to obtain a particularly smooth and aromatic distillate. A special feature of this blanco is its brief maturation for three weeks in American oak barrels, which gives it a fine, subtle woody note that perfectly complements its fresh agave flavours.
