This Bozal Ensamble Mezcal Artesanal combines three wild agave varieties - Espadín, Barril and Mexicano - and thus displays an aromatic depth typical of Oaxaca that can only be achieved using traditional production methods. The three agaves come from different altitudes in Mexico and mature for between seven and twelve years before being harvested by experienced mezcaleros. Each variety brings its own characteristics: While Espadín, the genetic mother of the Blue Weber agave, appears earthy and slightly floral, Barril from the Karwinskii family provides delicate citrus notes and creamy textures. Mexicano, a wild Rhodacantha agave, is particularly powerful and mineral and lends the ensemble a striking depth.
The Bozal Espadín-Barril-Mexicano is produced strictly by hand. The agave hearts are cooked in earthy pit ovens, then crushed with a horse-drawn tahona and fermented in open vats without the addition of artificial yeast. The double distillation preserves the unadulterated character of the agave. Bottled in the characteristic rustic ceramic bottle, this mezcal emphasises its natural, wild origins and appeals to lovers of authentic, traditional agave spirits.
