This Bozal Mezcal Artesanal combines three wild agave varieties – Espadín, Barril and Mexicano – and thus displays a depth of aroma typical of Oaxaca, which can only be achieved through traditional production methods. The three agaves are sourced from different altitudes across Mexico and mature for between seven and twelve years before being harvested by experienced mezcaleros. Each variety brings its own distinctive characteristics: whilst Espadín, the genetic parent of the Blue Weber agave, has an earthy and slightly floral profile, Barril – from the Karwinskii family – contributes delicate citrus notes and a creamy texture. Mexicano, a wild Rhodacantha agave, is particularly robust and mineral, lending the blend a striking depth.
The Bozal Espadín-Barril-Mexicano is produced strictly by hand. The agave hearts are cooked in earthen pit ovens, then crushed using a horse-drawn tahona and fermented in open vats without the addition of artificial yeast. Double distillation preserves the agave’s unadulterated character. Bottled in its distinctive rustic ceramic bottle, this mezcal emphasises its natural, wild origins and appeals to lovers of authentic, traditional agave spirits.
