The rum is made from molasses and undergoes a three-day fermentation in the renowned Trinidad Distillers Limited. It initially matures for 10 years in traditional bourbon barrels before being further developed for a further 12 months in ex-cognac barrels made from French oak in the cellars of Château de Bonbonnet in Cognac. This double maturation ensures exceptional depth and complexity. The rum is finished for 11 months in Duvel Barrel Aged Beer Casks, which adds an exciting and special flavour.
