Its roots date back to the 16th century, when apothecaries perfected the technique of maceration. This involves soaking herbs such as lemon verbena, coriander, mint, marjoram, camomile, fennel and many more in alcohol for a specific period to extract their flavours. After maceration, the liquid is filtered to ensure a clear and pure texture free from cloudiness.
