The Kozaemon Junmai Ginjo Hiyaoroshi is a characterful, seasonally matured premium sake from the Kozaemon Brewery (Nakashima Shuzō) in Gifu, Japan. ‘Hiyaoroshi’ refers to a traditional, once-pasteurised sake that has been matured over the summer and is released onto the market in autumn when it has reached its ideal drinking maturity. This seasonal speciality is characterised by depth, balance and a rounded, harmonious structure – perfect as a transition between the lightness of summer and the richness of autumn.

Produced from high-quality rice using the Junmai Ginjo brewing method, this sake displays a distinct style with elegant fruitiness and subtle complexity. The ageing process lends it additional smoothness and depth of flavour.
