The olives from our estates are harvested to strict quality standards, with imperfect olives sorted out by hand to ensure that only the very best fruit is used for processing. After harvesting, the olives undergo a natural preparation process in which they are treated exclusively with water and salt to preserve their authentic flavour and freshness.
The olives are then pasteurised, which allows for a shelf life of up to 24 months without the need for artificial preservatives. This gentle process ensures a high-quality end product that impresses with its natural flavour and long shelf life.
