After the lemons are harvested, they are peeled and the peels are set aside for maceration, while the juice forms the basis for the lemonade. The lemon peels are then distilled in water, with a small amount of olives added. This process allows the extraction of the essential oils and flavours of the olives, which give the lemonade its subtle, unmistakable olive note. A touch of seawater is added to intensify the fresh and tangy flavours of olives and lemons. Before bottling, the lemonade is chilled to 2°C and gently carbonated with subtle carbon dioxide to create a tangy finish.
