This Junmai Daiginjo is produced by the long-established Ozeki brewery, which has been synonymous with the highest quality in sake production since 1711. ‘Sakura Beauty 45’ is not only a testament to excellent craftsmanship, but also a symbol of Japanese aesthetics – delicate, floral and harmonious.

The basis of this sake is Yamadanishiki rice, which is regarded as the highest-quality rice variety for premium sake. For this bottling, it was polished to 45 % of its original grain size to achieve a particularly pure, elegant aroma. What makes this Daiginjo special is the yeast used: Imazu Benikanzakura, a new cherry blossom yeast discovered in Nishinomiya, Japan, in 2019. It lends the sake a delicate, floral profile, complemented by a subtle honeyed sweetness and soft fruity aromas. Despite its mild aroma, this sake finishes pleasantly dry and well-structured – a harmonious interplay of fruit, elegance and clarity.
