AI GALLI Ribolla Gialla Brut is an elegant, fine sparkling wine made from one of the most traditional grape varieties in northern Italy. Ribolla Gialla, an indigenous white wine variety from Friuli and Veneto, is characterised by freshness, fine aromas and a lively acidity structure. In AI GALLI's version, this classic grape variety is vinified with great care and transformed into a stylish brut sparkling wine using the Charmat method, perfectly combining modernity and regionality.

The grapes are harvested gently, gently pressed and the must fermented at a controlled temperature of 18-20 °C on selected yeasts. The base wine then undergoes a second fermentation in pressurised tanks, where it develops its fine perlage under controlled conditions (14-16 °C). After reaching the desired pressure, the wine is stabilised at -4 °C and then rests on the fine lees for another month or so. This process gives Ribolla Gialla Brut its freshness, clarity and elegance.

With an alcohol content of 12% vol., this brut sparkling wine is an ideal companion for festive occasions, summer aperitifs or stylish dinners - sparkling, dry and full of character.
