The Ardara Single Malt Irish Whiskey Edition 2025 46% ABV 0.7 l marks the official launch of the Ardara Distillery in County Donegal – one of Ireland’s newest and most exciting distilleries. Founded in 2022 by Sliabh Liag Distillers, it represents the revival of an ancient Donegal tradition: the production of heavily peated, artisanal Irish whiskies. This edition is Ardara’s first single malt and embodies the vision of continuing Ireland’s smoky whisky heritage in a modern form.
With a phenol content of 55 ppm, the Ardara Single Malt is one of the smokiest Irish whiskies of all. The intense peaty aroma comes from 100 per cent malted grain, which is processed using the traditional triple distillation method in copper pot stills. The distillery uses the sustainable ‘all-grains-in’ method, in which the entire crushed grain is distilled – a process that minimises waste and protects the environment. The by-products are used for methane production; there are also plans for a future collaboration with a regional composting facility. In this way, Ardara combines innovative thinking with environmentally conscious production and traditional craftsmanship.
Maturation takes place in a combination of bourbon, virgin oak and Oloroso sherry casks, which are stored using the Solera vat system to ensure depth, balance and consistent quality. This cask composition lends the whisky structure, body and a harmonious blend of peat, fruit and sweetness. Bottled at 46% ABV, non-chill-filtered and without added colouring, Ardara Single Malt presents itself as a modern, sustainable and characterful representative of the new Irish whisky culture.
