The Hillinger HILL 2 2023 is a sophisticated Austrian white wine that combines the Hillinger estate’s modern style with depth, precision and elegance. This characterful cuvée, made from 80 per cent Sauvignon Blanc and 20 per cent Chardonnay, is organically grown and represents an uncompromising selection process and a meticulous ageing process that lends the wine structure and exceptional complexity. The limestone-dominated Lager vineyards provide a distinct minerality that forms the foundation of this Burgenland white wine.


The vinification follows a particularly demanding process: spontaneous fermentation in used Burgundian barriques, followed by ageing on the full lees and a long period of ageing on the fine lees for a total of around 24 months. The cuvée then matures further in new and used barriques, ensuring that the influence of the wood is present yet deliberately subtle. This meticulous ageing process lends the Hillinger HILL 2 its depth, its quiet power and an ageing potential of five to eight years. With an alcohol content of 12.5%, this Sauvignon Blanc Chardonnay is precise, well-balanced and characterised by great inner tension.
