The Holyrood Distillery NOIR Bordeaux Yeast Single Malt Scotch Whisky, 47.1% ABV, 0.7 l, is an innovative Lowlands single malt Scotch whisky from the young Holyrood Distillery in Edinburgh, which is renowned for its experimental approach to whisky production. At the heart of this special bottling lies the deliberate use of French Bordeaux wine yeast, which plays a defining role right from the fermentation stage and lends the whisky a distinctive aromatic profile. This interplay of Scottish barley malt, selected yeast strains and creative cask maturation forms the heart of the distillery’s modern NOIR series. The so-called Noir Trilogy tells the story of an unusual union: French wine yeasts meet Scottish malt whisky and subsequently form a classic partnership with high-quality wine casks from renowned wine regions.


Maturation takes place in a combination of ex-bourbon casks and Bordeaux barriques, giving the Holyrood NOIR Bordeaux Yeast Single Malt Scotch Whisky an elegant balance of sweet and fruity aromas. Whilst the Bourbon casks contribute classic notes of vanilla and caramel, the Bordeaux wine casks impart lively red fruit aromas, a light acidity and a silky texture. Aromatically, this Single Malt Scotch Whisky from the Lowlands evokes fresh strawberries, raspberries, cherries and blackcurrants, complemented by hints of fruit jellies, cheesecake and sweet Scottish tablet. The whisky is bottled at 47.1% ABV and is non-chill-filtered, ensuring that its natural texture and aromatic richness are fully preserved.
