Description
The Schwarzböck Pét Nat Pinot Gris Extra Brut 11.5% ABV, in a 0.75-litre bottle, is an exceptional Austrian sparkling wine produced using the traditional Méthode ancestrale. Pét Nat stands for ‘Pétillant Naturel’ and refers to a naturally sparkling wine whose fine carbonation is produced directly in the bottle during fermentation. This traditional production method is considered one of the oldest ways of making sparkling wine and results in a particularly authentic, artisanal style.
This Pét Nat is made from Pinot Gris. The grapes are carefully hand-harvested in early September 2025 at 16.5° KMW and then processed using gentle whole-bunch pressing. Whilst the first fermentation is still underway, the must is bottled, where the residual sugar continues to ferment, naturally producing alcohol and carbon dioxide. Unlike classic bottle fermentation, no second fermentation is initiated and, as a rule, no additional dosage of sugar and yeast is used. Following bottle fermentation, disgorging takes place at the end of May 2026 with a minimal sulphur addition of 40 mg. With a pressure of 5 bar, an alcohol content of 11.5% vol. and an optimal drinking window from 2026 to 2030, this Extra Brut Pét Nat impresses with its natural character, freshness and elegance.
