Description
The Bottega Il Vino dei Poeti Valdobbiadene Prosecco Superiore di Cartizze DOCG Dry 11.5% represents a particularly prestigious sub-region within the Conegliano Valdobbiadene Prosecco DOCG. The grapes come from the Cartizze area, which covers just 108 hectares in the UNESCO-listed hills of Valdobbiadene in Veneto, specifically from the steep slopes between San Pietro di Barbozza, Santo Stefano and Saccol. The cuvée is based on at least 85 per cent Glera, complemented by Chardonnay and Pinot. Limestone and clay-rich soils composed of marl and sandstone, marked day-night temperature variations, and the protection afforded by the Pre-Alps create unique conditions for this Prosecco Superiore di Cartizze DOCG. The grapes are harvested exclusively by hand between mid-September and early October and transported to the winery within two hours.
Following gentle pressing and clarification of the must, the first fermentation takes place, before the second fermentation is carried out using the Martinotti method in a pressure tank at a controlled temperature of 14–15 °C. The sparkling wine is then left on the fine lees for at least two months, which enhances its structure and aromatic complexity. With 22 g/l of residual sugar, the Bottega Cartizze is classified as ‘Dry’; the total acidity is 5.0–6.5 g/l. In the 0.75 l bottle, this Cartizze Prosecco from Bottega combines a strictly defined terroir, labour-intensive hand-harvesting and meticulous sparkling wine production. It is recommended that it be enjoyed within 18 months.
