At the heart of this mezcal is the Espadín agave, known as ‘Doba-Yej’ in the ancient Zapotec language, which gives the bottling its name. The carefully selected agaves are processed under the intense Oaxacan sun and then prepared for distillation using time-honoured methods. This artisanal mezcal from Oaxaca is distilled twice in a traditional ‘alambique de cobre’, or copper still. The combination of Espadín agave, artisanal small-batch production and double copper distillation preserves the original character of the distillate and exemplifies the work of the Maestros Mezcaleros at Siete Misterios.
